I’m not gonna lie, I really loaded up these pancakes to make them extremely healthy but also keep us full! …. #SCORE The benefits of this protein powder is below:

Ok now to the recipe!

INGREDIENTS
2 cup oats (I used my vitamix blender)
1 banana
4 eggs
3 teaspoons baking powder
pinch of salt, pinch of cinnamon
3 medium scoops Vanilla Bob’s Red Mill Vanilla protein powder
2 tablespoons Mesquite Powder
1/8 cup Organic Coconut Flakes

 

INSTRUCTIONS
I tried my Vitamix blender with all these ingredients and it didn’t work so well. Therefore, I suggest you run everything through the mixer, I used my Kitchen Aid mixr on medium low speed until very well mixed.
Heat a nonstick griddle to medium high heat. Add batter in small circles – about ¼ cup per pancake. Sprinkle with blueberries or chocolate chips if you want. When the edges start to look dry (2-3 minutes), flip and cook another minute or two on the other side.

Lastly, top your pancakes with your favorite toppings! I used Alaska Blueberry Syrup from my mission trip, yay so good. I also used Trader Joes Organic Maple Syrup and a dap of TruWhip. It’s the 4th of July for crying out loud. Ya I went a little hard.. but it sure is good!
